The seeds themselves are encased in a shell that is usually gray or black, and sometimes found with black and white stripes. Although the shell on the outside is hard, the seeds inside are tender and have a light nutty flavor to them. Sunflower seeds date back to more than 5,000 years ago and were harvested by Native Americans who used all aspects of the sunflower from the seeds, their oil, stems, roots and the petals. It was the spanish that brought the over to Europe and today the leading commercial producers are fond in Russia, Peru, Argentina, Spain, France and China.
